When in doubt, stuff it.

One one to pack in extra veggies into your diet is stuff them inside your favorite protein. You can stuff just about anything from salmon, to steak to chicken, endless combinations to keep your taste buds going. I went more traditional and stuffed some chicken breast.

I stuffed with mushrooms, spinach and mozzarella cheese. Searing both sides before popping it into the oven to finish.

I paired it with some fresh veggies and fruit and rice! A win any night of the week.
