I try not to let anything go to waste. Fresh Fruits and veggies are usually the first to go however this week I bought a lot of strawberries and I wanted to do something with them because their starting to turn. I still have apples, blueberries and oranges left so I think we can sacrifice a few berries.
Now I have never made a strawberry cake, let alone any cake made with fruit, but per my google research, we have to clean, cut, purée and reduce some berries. Ima going to do about 3 cups of strawberries (feel free to use blueberries)
I’ll keep you updated on my progress, this cake will take a few hours. But it’s going to be worth it. Remember today is about effort, everything we do today is because it’s worth it, we are flexible and in control.
It finally feels like spring, why not enjoy it with a delicious cake 🎂
Here is an update, so thus far I have cut up the strawberries, added my sugar, cornstarch mix and let it simmer on the stove and thicken up a little.
I will now let it cool and then blend it with my hand blender.
See you in about 30-40 min. If you have the room in the freezer you can put it there, want it to cook even faster pour it into a sheet pan and place it in the fridge or freezer.
