Lemon 🍋 Pound Cake

Lemons are delicious, fresh, and good for you. You can make them even better by making them into a cake.


1 cup of sugar

1 1/2 sticks of soften butter

(Cream the two together)

Add 3 eggs (one at a time, well mix each)

1 teaspoon of vanilla

3 tablespoons of lemon juice (5 for good measure 🍋)


In a bowl

1 1/2 cups of flour

1 teaspoon of baking powder

Mix the two

Then add a third of your flour to the sugar, butte and egg mix. Mix, had another third, mix. Etc. until all combined

Pour into a well greased and floured loaf pan or Bundt pan for 45-60 min on 350 degrees. (Yes they take that long. Once the top gets slightly brown, add foil to the top to not let it get so brown.

(A good time to add the foil – this was about the 40 min mark for my oven, it’s electric)

The glaze

Powder sugar

Lemon juice

Vanilla (just a touch)
