Shrimp ceviche, ginger rice and avocado; something different but easy to make and absolutely delicious.
My ceviche consist of tomatoes, onion, lemon juice, salt / pepper, jalapeño, and shrimp.
My rice consisted of ginger, lemon and salt / pepper.
Tips:
- keep board clean, cutting up shrimp last
- Devein all shrimp (even if you buy the ones that say that are cleaned, check it only takes a minute.
- Taste
- Bring water to a full boil for shrimp, season well with salt and lemon.
- Cook shrimp until pink (1-2 min)
