Monday nights seem the be the craziest, you find out you have a higher work load, the kids have a project and your husband/wife is now sick. You can’t get a moment to yourself without someone asking, what’s for dinner?
Here a quick and easy dinner for those on the run. Warm your heart and soul and make your family happy this chilly winter night.
Smothered chicken, mashed potatoes and your favorite vegetable (I choose green beans)
Step 1: Peel some potatoes, throw them in a pot of boiling water (salt your water well)
Step 2: Clean your chicken breast, if their thick cute then in half. Season both sides, set aside. Cut up onion and garlic.
Step 3: heat a pan with oil and butter to medium high heat we want a good seer on both sides of the chicken breast
Step 4: once both sides are brown (5-7 min on each side) remove the chicken from the pan. Add your onion and garlic. Cook until translucent
Step 5: add flour to lightly coat the vegetables. Cook off flour add 1 cup of chicken stock 1/2 cup water and 1 tablespoon of butter. Let it reduce
Step 6: drain your potatoes, mash in a 1/2 stick of butter. (More depending on amount of potatoes used).
Step 7: add chicken to gravy. Cover and place in the oven to finish cooking chicken.
Step 8: Cook your veggie.
