Sautéed Garlicky collard greens & mushrooms over Sweet potato mash
How to & Recipe:
Prep:
- Clean greens
- Mince garlic (3 cloves)
- Slice mushrooms
- Peel & cut potatoes
- Pot of boiling water with salt for blanching
- Pot of boiling water with salt for sweet potatoes
- Add sweet potatoes to boiling water, cook until tender
- Blanch greens for 5-7 minutes
- In a sauté pan add some oil and butter, heat to medium, add garlic, sauté for 3 min. Add mushrooms
- Once all liquid is soaked up by the mushrooms add chicken stock
- Once all liquid is absorbed by mushrooms add a touch of red or white wine
- Remove blanched greens, add to cold water then drain and squeeze off liquid
- Add to mushrooms
