Oh La La Salad | Not more Lettuce | Refreshing Summer Sides

Broccoli salad

  • 4 cups of fresh broccoli
  • 1/2 cup miracle whip
  • 2 tablespoons of sugar
  • Salt/pepper
    2 tablespoons of vinegar
    1/2 a red onion or sweet onion
    2 strips of bacon (optional)

How to: miracle whip, sugar, salt, pepper, and vinegar in a small bowl. In another bowl cut up broccoli into bite size pieces (I remove the stalk), mince onion and cook bacon and mince. Combine broccoli mix with dressing. Refrigerate for at least 2 hours, serve.

Cucumber Salad

  • 2 large cucumbers
    1 cup grape tomatoes halved
    1/2 cup sweet onion
    1 cup water
    2 tablespoons of sugar
    1/2 cup vinegar
    Salt/pepper
    2 tablespoons of oil

How to: cut of cucumber, grape tomatoes and onions into a bowl. Combine water, oil, sugar, vinegar, salt/pepper. Add liquid to cucumber mix. Let sit in fridge for 2 hours and drain. Refrigerate for 30 min, serve cold.
