7 Day SELF Challenge

I have a challenged myself, spouse and peers to a 7 day SELF Challenge (eggs, tofu, beans and powder protein are ok). This challenge is to clean out the body and to restore. During this challenge we will be exploring the following:

  1. Food and it’s possibilities
  2. Balancing self
  3. A yoga pose everyday
  4. Today’s mantra
  5. Lastly, a new workout

Challenge start date: Friday Feb. 1st

Challenge end date: Thursday Feb. 7th

Recap date: Friday Feb. 8th

Below are a few Veggie dish ideas I will be trying for the next week:

Dish 1: Zucchini tots & rice

⁃ Rice – chicken stock, carrots, ginger, garlic

Dish 2: Honey mustard lettuce wraps

Lettuce – cucumber, avocado, tomato & cilantro

Dish 3: Rice noodles

⁃ mushrooms, broccoli, bell pepper, onions, garlic

Feel free to substitute and add per your diet. Add chicken if your looking for a boost in protein, tired of rice; try black beans or mixed veggies for a side. Also a great add in is tofu. It’s light, good for you and can be added to any dish as a meat/protein substitute.
